Neriman’s Mercimek - Yummy Lentils
First, in advance prepare the following:
1 C dry green lentils (greenish brown color)
4 C water
Place into pot. Cover and cook on medium until lentils are tender (estimated 45 minutes.) Drain and set aside.
Then, when you’re ready to cook the real meal:
2 medium sized onions, chopped
5 cloves garlic, chopped
2 T chopped fresh ginger
2 T olive oil
1 C chopped carrots
2 good sized potatoes, chopped
1-1.5 t cumin
14 oz. can tomatoes (chopped in food processor and then warmed/hot on stove or in microwave)
1-2 C hot water
Sautee onions together with garlic and ginger in olive oli. Add carrots and cook for 5 minutes. Add potatoes and cook for 5 more minutes. Add lentils and salt, pepper, and cumin. Stir and add warm tomatoe sauce. Then cover the lentils and vegetables with the hot water. Cook for one hour on medium heat.
Serve with rice pilav!
